In 2026, Beirut and Beyond’s total focus is on Lebanon and our Palestinian partners.
Lebanon faces a difficult situation: economic collapse, ongoing Israeli attacks, and rebuilding efforts after the 2024 war. Lebanon’s government is advancing a disarmament plan for Palestinian camps and Lebanese groups. All of these factors together are creating instability and uncertainty for the people of Lebanon. The situation is critical!
Palestinian partners are delivering crucial services to the camps and the entire nation of Lebanon. Palestinian Civil Defense members are responding to camp emergencies and Israeli bombings in Beirut’s southern suburbs. Ahlam Lajea is working to make two recycling centers self-sustaining. Simsim Kitchen connects cultures through cooking classes and a cookbook featuring Lebanese diversity.

Palestinian Civil Defense
In Lebanon, Palestinian Civil Defense (PCD) provides emergency resources to Palestinian refugee camps such as firefighting, search and rescue and paramedic services. They are the front line for COVID and disaster relief for Palestinian refugees. PCD is made up of Palestinian refugee volunteers. They continue to serve both Palestinian and Lebanese communities as the country of Lebanon faces war and economic collapse.

$350 a month can cover the center and clinic’s monthly rent.
$100 a month can provide PCD members with a stipend to cover communication and transport to and from emergencies.

Ahlam Lajea (Dreams of a refugee)
In Lebanon, Ahlam Lajea Association (ALA) is a non-governmental organization established by five young Palestinian graduates from Shatila camp in Lebanon. ALA delivers services in Palestinian refugee camps in the areas of education, protection and inclusion, governance, cultural initiatives, sports projects, Gender-Based Violence prevention, and Solid Waste Management Projects. Simsim Kitchen
In Lebanon, Simsim Kitchen is a cultural cooking experience. They facilitate cooking class in Lebanon and online, hosted by refugee woman to provide income. In 2022, they started collecting recipes from the different regions in Lebanon for a cookbook to highlight the diversity and resiliency of Palestinian and Syrian refugees, Lebanese citizens, and Armenian descendants.
We received a grant from Beyond Our Borders for Simsim Kitchen in 2026 for the cookbook. If you would like to support Palestinian refugee chefs, a monthly donation of $100 would provide income for 4 Simsim chefs!

Palestinian Organizations
Palestinian Civil Defense
Palestinian Civil Defense is a network of emergency services in Palestinian camps throughout Lebanon. They are the only independent stakeholder providing these emergency services in Palestinian refugee camps. They are made up of volunteers, refugees from the camps, who have been trained and certified in firefighting, first aid, and search and rescue. They receive a small stipend to cover communication and transport costs to and from emergencies.

Simsim Kitchen
Simsim Kitchen facilitates cooking classes in Lebanon hosted by women from impoverished areas and refugee camps. You will experience local food and culture while empowering women by helping them become independent and support their families.
